Most Ethiopian naturals lean towards fruity and sweet profiles. Bura Baturo Washing Station took this lot the other way: the whole cherries ferment sealed, without oxygen, before they dry, and that closed fermentation is what turns the blueberry jammy instead of fresh. We keep the intervention at medium, enough to build the fruit profile without letting it tip into anything boozy. It holds up on filter, on espresso, and through milk.

Origin
Bura Baturo operates at 2100 masl in Ethiopia. The high, cool elevation slows the cherries down and concentrates their sugars, which is what gives this lot its fruity profile.

Varietal
Heirloom, the indigenous Ethiopian varieties that were never formally catalogued. The fruit forward profile is already there before any process touches it.

Processing
Anaerobic natural: whole cherries ferment in sealed tanks without oxygen before drying with the fruit intact. The fermentation concentrates sugars and develops the blueberry and stewed-fruit character that defines this coffee.

Intervention level
This is a medium-intervention coffee. Anaerobic fermentation is managed for time and temperature to build the fruit character, before the drying takes over.
