FROM ORIGIN TO CUP
Danche Washing Station sits in Gedeb, in Gedeo, a station we have leaned on this year for expressive, clean Ethiopian coffee. Darling takes an unusual route: the heirloom cherries ferment anaerobically, sealed and low on oxygen, and are then washed rather than dried as a natural. That combination does two things at once. The anaerobic step builds the florals and the tea character, and the washing step strips back the heavier fruit so the cup stays light and clean. The result is a floral and delicate profile, closer to a cup of tea than to a fruit-forward natural.

Origin
Danche Washing Station sits in Gedeb, Gedeo, at an altitude of 2200 masl. The high, cool elevation slows the cherries maturation and builds the sweetness and the floral character the profile runs on.

Varietal
Heirloom, the indigenous Ethiopian varieties that were never catalogued. Their mixed genetics give the floral, tea-like structure; the anaerobic fermentation builds on it and the washing keeps it clean and provides high clarity..

Processing
Anaerobic washed. The cherries ferment sealed, with the oxygen kept out, then move through a washing step before drying. The anaerobic step builds the floral and tea complexity, and the washing keeps the cup clean and light rather than heavy with fruit.

Intervention level
Medium. The anaerobic fermentation is a extra controlled step, but the washing pulls the profile back toward clean and origin-driven rather than heavily processed and boozy.
