Rhubarb Fizz
FROM ORIGIN TO CUP
Ndimi Factory sits in Kirinyaga at an altitude of 1700 masl, near Kerugoya on the foothills of Mount Kenya, and is one of several wet mills run by the Inoi Farmers Cooperative Society, registered back in 1954 and processing cherries from thousands of smallholder farmers. This is a washed AA field blend of the classic Kenyan varieties. Washing strips back the more intense fruit notes of processing and lets the acidity and the terroir do the talking, which is the traditional Kenyan route and the reason the cup reads so clean and structured. The result is bright and layered, with the fizz of the rhubarb note running right through it.

Origin
Ndimi Factory sits in Kirinyaga at 1700 masl, on the slopes of Mount Kenya. The area is known for coffees with high acidity and a full, juicy body, and this lot follows that closely.

Varietal
A field blend of SL28, SL39, Batian and Ruiri 11. SL28 is the historic Kenyan selection, known for intense blackcurrant acidity; Batian and Ruiri 11 are newer, disease-resistant varieties grown alongside it. Together they give the layered brightness Kenyans are known for.

Processing
Washed. The cherries are pulped and fermented, then washed and dried. It is the traditional Kenyan route, and it keeps the cup clean, bright and structured, with the varieties and the terroir doing the talking.

Intervention level
Low. Washed processing at a cooperative wet mill relies on clean fermentation and careful sorting rather than any manipulation of the profile.
