FROM ORIGIN TO CUP
Danche Washing Station sits in Chelbesa, in the Gedeb area of Gedeo, and buys cherry from roughly 400 smallholders farming between 2000 and 2300 masl, organic certified. At that height the cherries mature more slowly and concentrate their natural sugars. The natural process ferments those sugars around the seed, which is where the mango and the candy-like strawberry notes come from, while the station's care keeps the cup clean rather than boozy. The balance between expressive fruit notes with a clear structure and clarity, is what keeps us coming back to Danche.

Origin
Danche Washing Station sits in Chelbesa, Gedeo-Ethiopia, with its farmers growing between an altitude of 2000 and 2300 masl. The high, cool elevation slows cherry maturation and concentrates the sugars which is the secret behind the sweetness of this profile.

Varietal
Heirloom refers to the indigenous Ethiopian varieties that have never been formally catalogued. These uncatalogued genetics are behind the complexity in Ethiopian specialty coffee. At Danche they deliver tropical fruit, bright citrus and a clean structure.

Processing
Natural process: whole cherries dry with the fruit intact. The extended contact between seed and pulp builds the tropical sweetness and the candy-like strawberry note, while the station's care keeps the cup clean rather than boozy.
